How do you cook our Cut of the Day
~Crocodile & Chorico Stew~
This dish is perfect to cook with a Slow Cooker!
• Olive oil
• 1 Chorizo sausage sliced
• 500g croc body rolls deboned and chopped
• 1 onion diced
• 3 cloves of garlic crushed
• 1 red capsicum chopped
• 2 Tomatoes diced
• 2 large potatoes, peeled and cubed
• 1 tbs paprika
• 1 tbs cumin
• 2 cups chic stock
• Salt & Pepper
• Handful of chopped italian parsley
• Crusty bread to serve
🏻 Fry Chorico until caramelized and charred then add onion, garlic and Croc cubes and fry until meat browns
🏻 Turn down heat and add capsicum, tomato, potato, cumin and paprika.
🏻 Once you smell the spices, pour in the chic stock. Season with salt and peper, cover and slow cook to perfection.
🏻 Stir through the chopped parsley and serve with crusty bread.
