How do you cook our Cut of the Day
~Tempura Crocodile Strips with Lemon Myrtle Aoli~
🏻 Cut the Croc Tail in strips
🏻 Prepare a Tempura batter mixture:
1xegg, 1/2 cup vegetable oil, 1x cup cold water, 1× tsp black pepper, 1xtsp baking powder, 1tsp salt, 250g Flour with 1 tsp corn flour.
Add egg and cold water into a bowl and beat while slowly adding the oil, salt and baking powder. Slowly add the flour mix whilst beating until the batter is smooth. Leave it to stand for 1hour.
🏻 Dip croc strips in Tempura batter and deep fry until golden.
🏻 Prepare a lemon myrtle aoli (mayonaise) dipping sauce and enjoy! (Any dipping sauce which will go well with shellfish will work)
